Well before the arrival of the first European settlers, Canada's Aboriginal peoples had discovered the food properties of maple sap. As early as the 1700's the Maple Leaf had been adopted as an emblem by the French Canadians. Speaking in its favor the first Mayor of Montreal described the Maple as "the king of our forest - the symbol of the Canadian people". It became a national symbol in 1868 and was included in the Canadian coat of arms in 1921.
